- 24 chicken drummettes (Large portion of the wing)
- olive oil
- cajun poultry mixed spice
- 1 tablespoon pecan wood chips
- Lightly brush wings with oil and sprinkle liberally with Cajun spices.
- Smoke with pecan wood chips for 35 minutes on medium heat.
