- 3⁄4 lb flank steak, thinly sliced against grain
- 2 teaspoons cornstarch
- 1⁄2 teaspoon salt
- 1 teaspoon sherry wine
- 1 tablespoon soy sauce
- 1⁄2 lb green beans, trimmed
- 1⁄2 teaspoon sugar
- 3 tablespoons oil
- 1 garlic clove, crushed
- 1 chunk fresh ginger, crushed
- 2 teaspoons cornstarch
- 1 teaspoon soy sauce
- 1⁄2 cup chicken broth
directions
- Dissolve the 2 tsp cornstarch into the 1/2 cup chicken broth and 1 tsp soy sauce.
- Marinate beef in cornstarch, sherry, salt, and soy sauce mixture for 30 minutes.
- Cook beans in 1 cup boiling water for 3 minutes. Rinse in cold water.
- Heat oil in PREHEATED wok. Brown garlic and ginger and remove.
- Add beef and stir-fry until colour changes. Add beans, sugar, salt and stir-fry 1 minute.
- Add dissolved cornstarch and stir-fry until thickened.

I made changes to the ingredient amounts , but was happy with the results. I try to use more veggies in my lunches so increased the green beans & decreased the beef and then proceeded with the recipe. This makes lots of sauce so I added some cooked brown rice at the end, but others might prefer to stir in noodles or serve over rice. The flavor is mild and marries well with the beef & green beans.
