  1. Preheat oven to 400.
  2. Beat eggs, then stir in oil, vanilla, and orange zest.
  3. Blend in sugar, and beat until thick.
  4. Add dry ingredients.
  5. Drop batter 2 inches apart on an ungreased cookie sheet.
  6. Flatten with glass dipped in oil and sugar.
  7. Bake 8-10 minutes.

I love this recipe, it's great for "emergency cookies". I was about to post my version but couldn't word it clear enough, so thanks! I use a tsp of lemon juice instead of orange zest, and sprinkle the tops w/nutmeg. I also use butter instead of oil for greasing the glass. A great recipe for kids to help with (Thanks Mom!)

Life couldn't be simpler making these cookies, compared to the cut out ones for the holidays. I made, baked and decorated with glaze that hardens and painted Christmas pictures on them. So beautiful and amazingly tasty cookies. We loved the addition of the orange in these. Lemon would be good too!
