Made in just minutes, this versatile Stilton butter adds punch to steaks, poultry or grilled fish - it also keeps well in the freezer.
- 3 1⁄2 ounces butter
- 8 ounces Stilton cheese
- 4 tablespoons flat leaf parsley, chopped
- 3 garlic cloves, crushed
- coarse sea salt
- fresh ground black pepper
- Mash the butter, Stilton, parsley and garlic together with a fork until well combined; season to taste.
- Spoon the butter on to a small square of parchment paper and roll into a cylinder about 1 1/2in thick. Twist the ends to secure. Chill for at least 1 hour to firm up before using, or freeze.
