Sticky Date Pudding With the Silkiest Butterscotch Sauce

"The English know this as Sticky toffee pudding, but 'down undah' it is fondly referred to as Sticky date pudding, coz the Aussies like to keep it simple (fairy bread anyone?). This is one of my favourite desserts and I made it especially for my dad while he's visiting - it's his favourite. Try it and let me know if it reminds you of floating on a cloud, relishing butterscotch showers, with angels strumming harps in the background."

  • 1. Add boiling water to dates and 1/2 tsp baking soda. Set aside for 10 minutes.
  • 2. Cream sugars and butter.
  • 3. Add and beat eggs until pale.
  • 4. Add vanilla extract, baking powder, baking soda, salt, nutmeg and flour.
  • 5. Gently fold till well combined.
  • 6. Add dates and combine well.
  • 7. Butter ramekins and divide batter between the 5 ramekins. Fill half way up.
  • 8. Bake at 180c for 22-25 minutes.
  • 9. Let cool for 10 minutes before removing from ramekins.
  • Butterscotch sauce.
  • 1. Combine ingredients and bring to boil, stirring continuously.
  • 2. Simmer for 2-3 minutes and take off heat.
  • To serve.
  • 1. Place pudding on a plate and drizzle generously with the sauce.
  • 2. Drizzle 1 tbsp of cream on each pudding.
  • 3. Take a bite, die and go to heaven.
