Stewed Tomatoes and Garbanzo Beans

"From Eden Foods. I served this over cous cous, but it would also be great over some brown rice or quinoa. Add some red pepper flakes if you want more kick."

 1. I was looking for something simple with stuff I always have and this fir the bill perfectly. I tweaked it by adding 2 cans of water (about 28 oz) and 2 cups of quinoa (dry) so that I could have it as a whole meal instead of as a side!

 2. Great versatile recipe. I love that it's so fast and easy and it only uses a few ingredients that I usually already have in my pantry. My 18 month old daughter loved it too. I served it as a main vegetarian dish with cous cous. I also added some oregano and parsley and sprinkled it with cheese. Next time I think I will saute some sliced zucchini and use a bit of feta cheese for extra flavor. Yummy!

 3. Oh I really loved this! Who'd have thought canned tomatoes could taste this good? I halved this recipe and served it as a side to honey-dijon chicken over rice. Just wonderful. Will definitely go in my regular rotation. Love garbanzo's and tomatoes. Add onion and garlic to the mix and I'm in heaven! Thanks for posting!

 4. Yum, Easy, tasty recipe for a side dish or a main dish. I served it tonight as a side with meatloaf and a green salad. I did add a couple of dashes of red pepper flakes and sprinkled each serving with Parmesan. Will be great as a vegetarian main dish. A good recipe for making variations. Add a little corn or sliced sausage or fresh spinach and on and on.

 5. Great side dish to our baked marinaded chicken. I will definitely make this again!

Tweaks

 1. The first time I made this, I halved the recipe and added about 1 tbsp of pimiento. I really enjoyed it by itself, but also ate the next day with rice. I made it again, but I ended up using plain tomato sauce instead of the whole tomatoes. After browning the onions/garlic I put some cooked spinach noodles in there along with the rest of the ingredients, but otherwise didn't change anything. My seven year old thought it was delicious. It smelled funny while I was cooking it, but it didn't taste anything like it smelled, so if you experience a funny smell, don't worry.

 2. It just so happens I made this today. I love garbanzos and eat them for protein instead of meat. I make mine adding chopped olives. I make a big batch and freeze in single servings so I can reheat when I'm hungry. Fabulous!!!

My rating system: (I don't like giving bad reviews, so if I don't like it, I'll just not review it.)

5 Stars OMG, this is one of the most amazing things I've ever eaten! I can't stop eating it, and I've eaten myself into a food coma.

4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again.

3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do.

I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN! I have a small (but growing quickly!!) cookbook collection and one of my favorite things to do is to read recipes and plan meals. Rachael Ray, Horn of the Moon and Moosewood are favorites of mine.

We spend a lot of time outdoors camping, hiking and backpacking. Yup. I cook in the woods too! I've made deals with my hiking buddies... If they carry in my food, I'll cook for them. I recently published a backpacking cookbook.
