- 4 slices bacon
- 2 scallions, shredded
- 1 teaspoon fresh ginger, shredded
- 1 tablespoon soy sauce
- 1 cup water
- 3⁄4 lb string bean, cut in 1-inch lengths
- In a wok, cook bacon until crisp and set aside. Stir scallion and ginger in the bacon fat. Add soy sauce and water and bring to a boil. Add beans and mix well. Cover and simmer over low heat until liquid is reduced and beans are tender, about 30 minutes. Serve hot, garnished with crumbled bacon.
