Stevia Carrot Cake

Ingredients:

Servings: 12

• 2 cups whole wheat flour
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon stevia, concentrate powder
• 1/4 cup walnuts (chopped)
• 2 eggs
• 1/4 cup unsweetened applesauce
• 1 1/2 cups carrots (grated)
• 1/2 cup zucchini (grated)
• 1/2 cup half-and-half
• 1 cup plain fat-free yogurt
• 1 tablespoon pumpkin spice

Directions:

1. Cream all moist ingredients together except eggs.
2. Add stevia and mix well.
3. Add eggs mixing well.
4. Then add the remaining ingredients and stir.
5. Place in a greased cake pan and bake at 350 for 35-40 minutes.
