  1. In a medium saucepan, cook onion in butter over medium heat until softened.
  2. Add stems and broth, cover and continue cooking until broccoli is soft (about 25 minutes) Puree in batches in blender, return to pan and stir in cream.
  3. Reheat soup and add pepper.
  4. Serve with any garnishes.

I've had such a craving for Cream of Broccoli soup and this was perfect! I don't like thick cream soups, this one is thinner with a very fine flavor. Be liberal with the white pepper, it really adds to the flavor. I served it with croutons made from leftover restaurant garlic bread (I hate wasting anything!) Thanks Peachez for a nice recipe!
