YUM ! I made this for my post-workout breakfast this morning, and it was perfect. Popped it on the stove while I took my shower, and it was ready when I got out! Great flavors melded all together, I added a bit more pecans just because they're my favorite nut. Thanks for posting, I will be having this a couple times a week for breakfast.   1. To small sauce pan melt the butter and add the oats.
  2. Stir for 2 minutes to toast.
  3. Carefully add the boiling water and reduce heat and simmer for 20 minutes.
  4. Stir in apple juice and simmer for additional 10 minutes.
  5. Sprinkle cinnamon on fruit and stir into mixture together with the brown sugar, and craisins and sinmmer 5 additional minutes.
  6. Remove from heat and allow to sit for a few minutes.
  7. Spoon into bowls and top with nuts and addtional brown sugar.
