For more years than I can count, I've made this but cooked the squash in the pan with the onion. It is at a high risk to get overdone quickly. Steaming it, then adding to the softened onions is the perfect answer for this. Thanks.

Simple yet full of flavor! The sweet onion just takes this veggie over the top with goodness. We really enjoyed this tonight with grilled chicken. I did cut rounds instead of quarters with the squash but that made no difference in preparation. Made for your win with Tic Tac Toe Spring 2010

Have to say that yup, this is ridiculously good. My mom always sliced the squash into discs but this was a staple during summer squash season. We would use zucchini either alone or with the yellow squash. Excellent recipe!
