"Baked Omelet, Not the typical Fire House Full Spread breakfast. Traditionally weekends and holidays at the firehouse mean a large breakfast with eggs, bacon, Biscuits, sausage gravy, and hash browns. I made this as a healthier alternative, the guys loved this one. You can adjust the peppers and hot sauce to fit your taste."

  • Heat oil in large non-stick skillet.
  • Add onion, peppers, mushrooms, salt and pepper to taste and sauté. Remove while still firm (do not over cook).
  • Grease 9x13 pan, layer in pepper onion mixture, cheese, and ham.
  • Beat together Eggs, Soy milk, hot pepper sauce, salt and pepper. Pour over Pepper mixture.
  • Bake at 350° F for 25 to 30 min, or until done.
