Star Jone's Famous to Die for Mac and Cheese

  • Directions:.
  • Pre-heat oven to 350°.
  • Pour milk and butter into a medium sauce pan and heat over a low flame. Slowly add each kind of cheese (except 1 oz of Sharp Cheddar and a ½ oz of Blue Cheese) and allow it to melt. Be sure to cook over a low flame and stir constantly to prevent clumping and sticking.
  • While the cheese is melting, in a separate pot, cook the macaroni according to the directions (do not overcook) with a dash of salt and 1 tablespoon of olive oil.
  • Drain macaroni and pour ½ into a large baking or casserole dish. Add salt and pepper to taste then slowly add half of the cheese/milk mixture and stir together thoroughly. Pour remaining macaroni and cheese/milk mixture into the a 2 quart baking dish and stir well.
  • Sprinkle remaining Sharp Cheddar and Blue Cheese on top of the macaroni and place in the oven. Bake until a light golden brown (approximately 20 - 30 minutes). Let stand a half hour and serve.
  • You have just died and gone to heaven!

  1. Does anyone know the calorie count? My concern is fattening up my roommate. He's 78 and 8" taller than me and about 10 lbs lighter than me. I weigh 134 and don't care if I gain 10 pounds. I want to fatten him up with yummy treats like this.

  1. 10 stars...I first used this recipe about 2 years ago. It is wonderfully unique!! I don't eat Mac n chz often due to the calories. But the flavor mix in this recipe is so different that I only make mac n chz using this recipe. I also make extra each time to freeze for a quick addition to a weeknite meal.

Oh, my goodness, is this GOOD!There IS no other macaroni and cheese recipe as far as I'm concerned.I do tart it up a bit, but the idea of adding blue cheese had never occurred to me.I follow a low-carb diet and so make this -- only about four to six times a year -- with Dreamfield's and a mixture of half-and-half and heavy cream to make the sauce. In addition to the blue cheese, I add leftover cheese of any type, including cream cheese, as well as grating in some fresh Romano.

  1. I use Dreamfield's or that Barilla High-Protein in the yellow box; I substitute heavy cream for some of the milk / half-and-half; I grate in some nutmeg; I use up the odds and ends of (almost) any cheese I have in the fridge; I use heavily-buttered panko for the crumb topping.

Hi! Jelly here! My husband and I live on the Great Plains in the coldest state (feels like it) in the country. My husband and I farm. We grow hard red spring wheat and soy beans. We have a golden retriever pup! Our baby! :) Her name is Maisy! 75 pounds!!!!Also, have nine kitties - Sarah, Sebastian, Midnight, Henry, Sam, Star, Garfield, Lilly, and Zeus! Our area is rural and we have a 45 min. drive to the nearest city. It is a long trip there and back! We try to be as green as possible and recycle. We have become very conscientious of our environment. It is our children's future. We carry our our own canvas shopping bags to the market and use a cooler that we keep in the trunk or back of the pickup. No more plastic! We love life on the farm and feel very fortunate to have had so many wonderful experiences in life. Done a lot of traveling and feel satisfied. We make and bottle our own wines. They are delicious! This year's wine is working in the carboys in the basement and should be a great batch. We picked late and they were very sweet and required very little sugar. Got the jelly made and sent some to relatives and friends! It has been a tough season this year....sigh... Soybeans and wheat are harvested and in the bins! Now we hope the market is in our favor! Christmas was quiet as we had a blizzard that immobilized the state for three days...bah humbug...it took us another three days to dig out! Okay. I've had enough snow for the winter!!!! Oy vey....
