This recipe worked well and made a good quality jam. We don't eat this fruit and have a tree so it is great to be able to use them.

Directions

  1. Trim the winged edges from the carambola fruit and place in a saucepan.
  2. Add water and boil until tender[approx 15 minutes].
  3. Add the sugar, lemon juice and salt and boil until the jam sets.
  4. Pour into sterilsed jars and seal.
