My mom used to put cheese in all our stamppotten, this is the one i still make with cheese as well. If you can get rookworst with this would be really nice, but i think any type of sausage or a meatball tastes great with this dish. I used the fit food cookbook for some of the measurements, i usually cook this by intuition... (And i usually add some baked bacon cubes as well, add them on the plate or they will go soft when you reheat)
- 1 kg potato
- 3 pinches salt & pepper (freshly ground)
- 15 g butter
- 100 ml milk
- 450 -500 g curly endive lettuce
- 250 g gouda cheese, in small cubes
- Peel potatoes, cut them in pieces and cook in a little water for ca. 20 minutes.
- Drain excess water and add all the other ingredients.
- Mash and stir so you get all the stuff from the corners mixed in as well.
I enjoyed stamppotten when we lived in Europe and was able to get some lovely sausages to go with this from the German butcher near our house. This was nice as an "upmarket" bangers & mash meal, the endive does give it a different taste. By itself it was lovely, with the bangers & gravy it was great, I think it does need that bacon/meat lift somehow. Thanks for posting, made for ZWT4.
Not quite what I expected, but did make for an interesting side dish. An email from Vanja assured me the curly endive is not cooked but mashed in - which I did along with the rest of the ingredients.I wish I had made more bacon for added flavor which I will do next time around.
