  • Add gelatin to cold water in a bowl.
  • Set this over a saucepan with boiling water until the gelatin is clear.
  • Cool to room temperature.
  • Meanwhile whip the cream until it is medium thick.
  • With the mixer still on, pour gelatin into the center of the cream.
  • Continue to whip. Add the powdered sugar and vanilla extract.
  • Continue whipping until cream is in soft peaks.
  • At this point you can add food coloring or use as is.
  • Frost cake or cupcakes.

  1. Wonderful icing recipe! I sell my cheesecakes and wanted to decorate them. This will be my new go-to for any cake. Everyone says it is delicious and loved it on the cheesecakes. I also folded in flavoring that knocked it out of the park. For Christmas, I added crushed candy canes. Using this versus other options made it more carb friendly as well.
     
  2. Wanted to frost an ice cream cake, but wanted to be able to do it a day in advance and not have it melt or weep. This recipe was not only easy but tasted great and performed just the way I wanted. I'm keeping this one handy from now on
