I got this recipe from an old friend who became a chef for a local grocery store. They make this soup around St. Patrick's day at the grocery store & we always loved it. Yay, now we can have it more than once a year! I hope you enjoy it as much as we do!

Ingredients Nutrition

  • 1 cup onion, chopped
  • 1 cup carrot, chopped
  • 1 cup celery, chopped
  • 2 -3 tablespoons butter
  • 1 -2 small potato, diced
  • 7 ounces dubliner Irish farmhouse cheese (or more to taste, no substitutes)
  • 1 quart vegetable stock
  • 1 12 quarts half-and-half cream (I use whole milk sometimes)
  • 34 cup flour
  • 6 ounces guinness beer, NOT extra stout

Directions

  1. Saute in butter the onion, carrots & celery until just tender. Add the flour, 1/2 of the beer, then the 1/2 & 1/2 in small amounts. Add the rest of the beer, and the potatoes. Simmer gently until potatoes are tender. Enjoy!
