  • To make dressing, whisk together garlic, olive oil, balsamic vinegar, 1/2 teaspoon salt, and pepper to taste.
  • While grains are still warm, toss them with half of the dressing. Let cool to room temperature.
  • Add the corn, cherry tomatoes, bell pepper, cheese and herbs the grains.Add more dressing. Season with salt and pepper to taste.
  • Refrigerate any leftovers.
