- 2 small garlic cloves, finely minced
- 1⁄3 cup olive oil
- 2 tablespoons balsamic vinegar
- 1⁄2 teaspoon kosher salt
- black pepper
- 4 cups cooked sprouted brown rice or 4 cups quinoa, prepared according to package directions
- 2 cups fresh sweet corn
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, diced
- 4 ounces smoked mozzarella cheese or 4 ounces gouda cheese, diced
- 1⁄4 cup chopped fresh chives
- 1⁄4 cup chopped fresh parsley
- 1⁄4 cup chopped fresh basil
directions
- To make dressing, whisk together garlic, olive oil, balsamic vinegar, 1/2 teaspoon salt, and pepper to taste.
- While grains are still warm, toss them with half of the dressing. Let cool to room temperature.
- Add the corn, cherry tomatoes, bell pepper, cheese and herbs the grains.Add more dressing. Season with salt and pepper to taste.
- Refrigerate any leftovers.
