    • 1 lb fresh beet, cooked
    • 1/2 cup walnuts, finely chopped

    Dressing

    Directions:

      Peel and dice beets.

      Add walnuts.

      Combine dressing ingredients and add to beets.

      Garnish with parsley.

      This is an unusual dish with many layers of flavours. The creamy dressing makes it elegant, the walnuts give it another dimension of texture and earthy flavour, and the horseradish is so faint, it just blends in. Because of the orange juice, this can't be served with every meal...it went well with our schnitzel tonight. Even better the next day, too!
