Ingredients:

Servings: 8

• 10 ounces pl flour
• 1/2 teaspoon salt
• 1 teaspoon bicarbonate of soda
• 3 tablespoons caster sugar
• 4 ounces dried fruit
• 1 egg, beaten
• 7 fluid ounces buttermilk (3/4tblsp cream of tartar mixed in 7floz milk makes buttermilk)

Directions:

1. preheat oven 190 gas 5.
2. grease 2lb loaf tin.
3. sift into a lg bowl the flour, salt and bicarb soda.
4. stir in the sugar.
5. make a well in the centre and add the dried fruit, egg and buttermilk.
6. mix lightly and quickly into the flour for a soft dough.
7. using floured hands remove doughand kneed very briefly.
8. then press into prepared tin.
9. bake 35to40mins until top is a dark golden and loaf feels firm.
10. turn out to cool.
