A slow burn side dish, I quite like this in a tortilla as a wrap or on a jacket potato.
- 100 g yellow split peas
- 300 ml water
- 1⁄4 teaspoon turmeric
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 spring onion, trimmed and chopped
- Place the peas, water and turmeric in a pan and bring to the boil.
- Cover and simmer for 25 minutes.
- Stir in the oil, juice and spring onions and serve.
I was kind of expecting this to be a little mushy so it would sit on a potato but it didn't. However the flavors were very nice.
