I really love this! I let it simmer most of the day on minimum heat and at dinner it was thick and perfect. Very deep flavor and the Veggie stock is just ideal here and the sour cream adds uniqueness(as I have never put it in pea soup before)and another flavor level. It's oh so easy and quick to put together and with only the occasional stir during cooking it tends to it's self. The aroma is nothing short antisapition in a pot! My super picky DH had two big bowls and this is now my standard pea soup recipe. Thank you so much for shareing this Vicki.
