  • Add water to peas, boil 2 minutes, remove from heat, cover tightly and soak 1 hour.
  • Add remaining ingredients.
  • Cook slowly till peas are tender, 45 minutes.
  • Remove ham bone.
  • Rub peas through sieve or leave unstrained, season.
  • If soup is too thick, add water.
  • Garnish with ham.
