  • 12 cup butter, melted
  • 14 cup mini chocolate chip, melted
  • 14 cup cocoa
  • 34 cup Splenda granular
  • 14 cup Splenda brown sugar blend
  • 2 eggs
  • 1 teaspoon vanilla
  • 12 cup flour
  • 1 tablespoon espresso powder
  • 34 teaspoon baking powder
  • 14 teaspoon salt
  • 12 cup mini chocolate chip

directions

  • Preheat oven to 350°F.
  • Spray mini muffin tin with cooking spray or line with mini muffin paper liners.
  • Combine first 7 ingredients in a med bowl.
  • Add remaining ingredients.
  • Stir until combined.
  • Fill each muffin cup 3/4 full.
  • Bake fro 12-15 minutes or until set.

  1. I reduced the white Splenda by a half cup. The brownie bites came out fluffy, good height and texture. Topped the cooled minibites with chocolate ganache: a cup bittersweet chocolate pieces, a half cup whipping cream and a tsp espresso powder melted in a double boiler. Not quite sugar free then, but delicious!

  2. Oh Sam! We loved these! I will definetly be using this recipe often! (and probably doubling it!) Great flavor. I used my mini muffin tins and they are the perfect little bite size treat! I think I may try other flavors of chips to change it up a bit next time - mint or cherry?? *Yummy* Thanks for posting! Made for PRMR
     
  3. These are quite yummy little treats. I don't have a mini muffin pan, so we just made them in a regular pan and cut them up. The kids had brownie sundaes with them last night and I have frozen the rest for lunches. Thanks Sam.
