Wrapping the grated potatoes in cheesecloth and squeezing out ALL the water ensures fluffy, white latkes and best of all, no splatters during frying!
- Peel and grate potatoes and onion
- Squeeze out in cheesecloth until only a stiff dough remains.
- Add eggs, salt and pepper, mix well.
- Form into balls and fry 2-3 minutes on each side, in hot oil.
