Wrapping the grated potatoes in cheesecloth and squeezing out ALL the water ensures fluffy, white latkes and best of all, no splatters during frying!


  1. Peel and grate potatoes and onion
  2. Squeeze out in cheesecloth until only a stiff dough remains.
  3. Add eggs, salt and pepper, mix well.
  4. Form into balls and fry 2-3 minutes on each side, in hot oil.
