Spinach With Two Cheeses

"This is so rich and delicious. I have always loved spinach, but even people who normally wouldn't eat spinach(children), will like this recipe. It's easy."

  • Cook and drain spinach.
  • If you're using fresh spinach, be sure to wash thoroughly, chop fine, and drain.
  • Melt 6 tablespoons butter and cool.
  • Mix well 2 cups ricotta, 2 beaten eggs, salt, pepper, and nutmeg.
  • Add spinach and melted butter.
  • Place in buttered baking dish.
  • Dot with 4 tablespoons butter and sprinkle with 1/2 cup parmesan.
  • Bake at 425 degrees for 10 minutes.

  1. This was beyong GREAT! My picky (veggies need to be just right) DH loved this and sure enought my 6y old and 2y old inhaled it. Though I have to admit I don't normally keep romano cheese on me, so used mozerella instead. It still came out wonderful. This is now my iron-packed side dish. Thanks Robinjoy

I learned to cook from my dad. He taught me about seasoning food, and how to DIY. Subseqently, I make my own yogurt cheese, bread, and dry alot of foods to preserve them. I don't can anymore since moving to the city in a small apartment. I have fibromyalgia, so frequently put off the clean up until I can rest for an hour or two. I get so involved when cooking, that I find I don't notice the pain.
