Tortellini, spinach, and tomatoes are a nice combination in this tasty soup.

This was very good, a great and flavoursome soup, easily and quickly prepared. Small thing, spinach is not mentioned in the ingredient list, so I used about 300gr of baby spinach which I felt was a good amount for our tastes. When I shopped for the pasta they didnt have tortellini -- every other shape but no tortellini! - so I used a similarly shaped stuffed pasta, using a cheese, basil and sundried tomato stuffing, which worked well and we very much enjoyed. Thank you, Doug for sharing this lovely recipe, made for Consideration Tag Game.

  1. In a large saucepan, saute onion, and garlic in oil until tender.
  2. Add the broth, water, sugar, salt, and pepper, and bring to a boil.
  3. Add tortellini, cook 7-9 minutes or unttil tender, stirring occasionally.
  4. Reduce heat, stir in tomatoes, and spinach, and heat through.
  5. Just before serving, sprinkle with Parmesan cheese.
