Mmmm nice meatloaf Bergy! great change from the usual. I had to use Parmesan cheese, didn't have any mozzarella, butit did seem to go ok with the spinach. The tastes of the shallot, garlic, oregano and nutmeg blended well with the spinach and meat. We used some salsa instead of ketchup. Very nice dinner, thanks for sharing, (had to redo this, the first one somehow didn't have the stars)

A great easy meat dish that also includes cheese & spinach must be good for you:) We served ours with new potatoes and a salad however in the winter I will serve with veggies and a gravy. Thanks for posting Bergy. I will use this recipe often even to guests:) A real keeper :)

I do this using ground turkey to cut some calories and fat. and I like your combination of spices. I never put nutmeg in meatloaf before. Thanks for sharing.

I made this as a make ahead dinner for my grandma and used 3 mini loaf pans instead.. They turned out great. These were great for sneaking in some extra veggies. Thank you again!

Very tasty and healthy supper! I think there is a mistake though in the recipe. It says to roll out to a 12 x 18 rectangle and then in the recipe changes the 18 it 8 inches. I did roll it out to 8 inches and it was perfect! I didn't have any shallots so I used 1/2 small onion instead and it turned out fine. I served this with a beef gravy over top and steamed veggies. Thanks for sharing!

I had stuffed meatloaf before, but it was with broccoli & cheese. I'll have to try this way!
