This is an absolutely delicious spinach salad, and so easy to throw together. With our temperature in the 90's right now, this was a perfect meal...it really is hearty enough to be a main course. Thanks Evelyn, we're already planning on when to have this again!

Great salad. Loved the dressing on spinach and romaine but didn't add the bacon as I served it with Scotch eggs. Great for a very warm day.

Well, I don't think this salad is for everyone but I loved it! My husband and I liked the spiciness of the dressing. Don't forget to put the bacon drippings in the dressing like I almost did!!!

We didn't put mushrooms in it but I think it was fine without them. I love onions, bacon and boiled eggs in my salad so I think this will be my main spinach salad from now on. Also, I only put 1 tablespoon of sugar and we didn't miss the other 1/2 tbsp. We took it to my husband's family's home for Christmas Dinner to go with Prime Rib and potatoes and it was an excellent accompaniment. Sister-in-law really liked it! Thanks evelyn!

Delightful! This dressing is an especially nice one to keep on file for almost any salad. It was a perfect light dinner salad. Just what I was looking for! Thanks!

OMG, This is the best spinach salad I've ever tasted. My dh and his friend absolutely LOVED it. Wouldn't change a thing. DH has requested it to go with our thanksgiving dinner.

This one was a winner with everyone. Served it Christmas Day (Australia) along with prawns, roast pork, ham and a few other salads. Yum

This is a lovely spinach salad, which I enjoyed very much for my lunch today. It was easy to downsize the portions for one person. The dressing is creamy and tangy - just right. Thanks for posting!

Wonderful and strong flavours, gorgeous appearance. This salad is superb. For the dressing, I used a dijon that had green peppercorns mixed in and Best Ever Homemade Mayonnaise. I fought DH and the kids off with a fork so I could have more than my share. Made and inhaled for Zaar World Tour.

This is one of the best spinach salads I have ever eaten! I love the sweetness of the dressing with the tang of the grated onion. A definite keeper!

SO good! Only change -- pancetta for bacon. Emulsifies beautifully and the resulting creamy dressing holds well in the fridge. Another great one, Evelyn!

Made this twice now, and enjoyed it very much. This recipe went right into my personal printed cookbook. Since I'm the only one that eats spinach salad. I just toss spinach with enough dressing for that meal, and refrigerate the rest. Thanks for sharing a wonderful recipe.

We had guests last night and I decided to serve this with our dinner. They loved this recipe and remarked on the salad over and over. I added some red onion slices to the salad. I did not have time to chill the recipe, and next time I will be sure to do so as I think it made it a bit droopy. But it was still good! Great recipe.

I agree with the other posters. This is delicious. I discovered to late, that I didn't have the mushrooms, but it was just fine without them. I'll have to add them the next time. Perfect on a hot summer day. :)

Evelyn this was so very good!! The dressing is outstanding (even though I misread the recipe and finely chopped the onions rather than grating them). Aussie bacon doesn't really crumble well so I chopped it and then cooked until it was nice and crispy. Also I'm not real great at slicing boiled eggs (shame on me)...must get one of those egg slicer things-it didn't seem to matter though. All in all your recipe has convinced me to make a new cookbook so that all of the sensational salads I've made and want to make again are at my fingertips.
