Spinach Salad With Gorgonzola Cheese

ingredients
- 170.09 g Baby Spinach
- 78.78 ml mediterranean apricots, chopped or 78.78 ml apricot, of your choice chopped
- 236.59 ml chopped green apple (about a half of a medium apple, eat the rest of it cause it's good for you)
- 1 small lemon, juice of
- 42.52 g raisins
- 236.59 ml chopped broccoli floret
- 59.14 ml sunflower seeds
- 59.14-78.78 ml crumbled gorgonzola (or more) or 59.14-78.78 ml feta cheese, to your taste (or more)
- salt and pepper
- 78.78 ml enova salad oil or 78.78 ml light olive oil
- 78.78 ml honey
- 59.14 ml balsamic vinegar
directions
- Cut stems from spinach and wash and spin dry.
- Chop the apple into small bite size pieces and place in a covered storage bowl or resealable bag.
- Add the lemon juice to the apples and set aside.
- Add the chopped apricots, raisins, broccoli florets and sunflower seeds to the spinach.
- Just before serving add the chopped apples and crumbled gorgonzola cheese.
- Add enough dressing to lightly coat. You will have extra dressing left over, but it keeps well.
- Add salt and pepper to taste.
- Dressing.
- Combine the Enova Salad Oil or light olive oil, honey and Balsamic Vinegar.

I really enjoyed this. I love spinach salad and really enjoyed the addition of apples and apricots. Plus the familiar combination of sunflower seeds and broccoli made this great. My only change would be to reduce the amount of honey in the dressing...I like my dressing a little more "balsalmic". Thanks for posting a great salad!

I usually don't like fruit in my green salads, but it really worked here. DBF loved this, rating it 5+ stars, which is high praise from him. I found the dressing to be a little too sweet for my tastes, so I may cut back on the honey next time. The only real change I made was to use dried cranberries instead of raisins. The apricots didn't travel so well to class, so I may use dried next time if I won't be eating it right away. Thanks for posting Nimz!

This salad is fantastic! all of our favorite things are in it, I even added in apricots, as I have a large box to use up, I used way more than 1/3 of a cup though, in fact I really didn't measure the salad ingredients but I did measure and doubled up the dressing. Both myself and DH loved this salad for dinner tonight, this salad is very filling so no need for anything else with it! Thank you for sharing this great recipe Nims!...Kitten:)

I was one of the original members of Recipezaar that was truly a community of individuals that enjoyed each other in forums and chat rooms. I've been a member of this site since 2003. Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member.
