- 1 pint strawberry, hulled
- 3 tablespoons rice vinegar
- 1 tablespoon olive oil
- 1 teaspoon minced tarragon
- 1 tablespoon snipped chives
- 1 teaspoon lemon juice
- 1 garlic clove, minced
- 1⁄4 cup water
- salt and pepper
- 8 cups baby spinach leaves
- 4 slices red onions
- 4 kiwi, peeled and sliced
- 1⁄4 cup feta cheese
directions
- Puree the strawberries with a pulsing motion in a food processor till smooth.
- Stir in the rice vinegar, olive oil, tarragon, chives, lemon juice, garlic, water, salt, and pepper.
- Divide the spinach, red onion, and kiwi among 4 chilled serving plates.
- Sprinkle the salads with feta cheese.
- Serve with the strawberry dressing.

My husband and I moved to Tennessee from Pennsylvania in 2005. We absolutely love it here, especially being near the Smoky Mountains. My kids are grown and are out of the house. I am a nurse practitioner, work for Evercare, a division of United Healthcare, caring for elderly patients in nursing homes. My husband and I love the outdoors, and we especially enjoy hiking in the Smoky Mountains. I also enjoy doing Jazzercise as often as I can get there.
