Spinach Rice Casserole

  • Preheat over to 350 degrees F.
  • Heat oil in a large saucepan.
  • Cook onion and garlic in hot oil until onion is tender.
  • Add can of tomatoes, Italian seasoning, and beans. Bring to a boil; reduce heat and simmer for 3 minutes.
  • Stir in rice, spinach, 1/2 cup mozzarella cheese, pepper, and salt to taste.
  • Spoon into greased 2-quart baking dish.
  • Sprinkle remaining 1/2 cup cheese on top.
  • Bake 30-40 minutes or until heater through.
