  1. Preheat oven to 350.
  2. In blender, combine eggs and cottage cheese. Puree until smooth.
  3. Transfer to a medium bowl and stir in spinach, green onions, quinoa, feta and pepper. Spread into glass baking dish sprayed with cooking spray.
  4. Bake for 35-40 minutes or until golden brown and set.
