This quiche is my favorite. My children love it too, and it's a great way to get them to each spinach without complaining.
- 1 (10 ounce) package frozen chopped spinach
- 1 cup milk
- 4 eggs (beaten)
- 1⁄4 cup chopped onion
- 4 slices bacon (fried and broken in pieces)
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon paprika
- 1⁄2 teaspoon dry mustard
- 1 cup shredded cheddar cheese
- 1 (9 inch) pie crusts
- 1⁄4 cup cheddar cheese
- Cook the spinach and drain well.
- Mix remaining ingredients and add to spinach.
- Put in unbaked pie shell.
- Sprinkle 1/4 Cup cheese on top.
- Bake at 400 degrees for 40 minutes.
Delicious - and EASY!
Used evaporated milk for a richer taste.
Didn't have cheddar cheese, used 1/2 mozzarella and 1/2 colby jack with about 1/4 C parmesan
I made this for my son's election day breakfast for his classroom, and everyone loved it - students, teachers, and parents alike. I set the timer for 35 minutes because I like to check it, and it was done - brown even. I was afraid I had overcooked it, especially since I had to warm it up the next morning, but the texture was just right. My technique was a bit different - I put the bacon, onion, and cheese in the pie crust, then poured the egg mixture on top. This left the cheese poking through the top, so you really didn't need the extra on top. Also, I used a sharp cheddar, and I think I would cut back to 1/2 cup next time without missing it. Save the calories! I will definitely be making this again (in fact, I wish I had a pie crust, because I'd make it tonight :-)
Got rave reviews on this recipe. I too reduced the milk to 1 cup and only used 1 pie crust. Also, mixed 1/2 cup chedder with 1/2 cup mozzarella to cover the cheese ingredient. Did make sure I squeezed all water out of spinach and all turned out great! Kids who never eat spinach even ate it and loved!
