This quiche is my favorite. My children love it too, and it's a great way to get them to each spinach without complaining.

  1. Cook the spinach and drain well.
  2. Mix remaining ingredients and add to spinach.
  3. Put in unbaked pie shell.
  4. Sprinkle 1/4 Cup cheese on top.
  5. Bake at 400 degrees for 40 minutes.

Delicious - and EASY!

Used evaporated milk for a richer taste.

Didn't have cheddar cheese, used 1/2 mozzarella and 1/2 colby jack with about 1/4 C parmesan

My new favorite quiche! I really liked the combo of bacon, cheese, and spinach. I served it with a spinach salad and it made a great late night supper. I think it would be wonderful for a brunch, lunch, or breakfast as well. Instead of using all cheddar cheese, I did use mostly sharp cheddar and filled in with a little Swiss that I had left over. It did seem just a tad too salty though. That could be due to the type of cheese I used or maybe my bacon was too salty. Also, the crust did seem to brown a little too much but that may be due to my oven (which heats a little higher than it should). Next time I think I will use a mild cheddar, I'll set the oven at 375 and check it at 30 and 35 minutes.

I looked at several recipes but none appealed to me. THIS was the recipe I was looking for! I did not pre-cook the spinach - it cooks in the oven. I didn't have a few of the items so I made a some substitutes. Soy milk for the cow milk. Our soy milk can be a little sweet in recipes so I added a couple of tablespoons of nutritional yeast - weird stuff but useful. I didn't have any onion (odd, right?) so I used 3 - 4 green onions. My frozen pie shells were quite deep so I added 2 - 3 more eggs. The crust started to brown 15 minutes before the quiche was done so hubby turned down the oven to 340°. They came out perfect. We are taking them camping over the 4th thus we "had to" taste test first tonight - very yummy. Imagine what they would have been like if I had all the listed ingredients! I was thinking of adding a few pieces of Morning Star vegetarian bacon but I couldn't find it in my mess of a freezer. Thank you DJB!
