Spinach, Potato and Cheddar Bisque

"Had this soup while staying at a B&B in NH. I can't remember the name of the restaurant but the soup they served with dinner was one of the most delicious things I had ever tasted and I just had to try and recreate it. This was the nearest I could get without having the actual recipe on hand. Enjoy!"
