This recipe was shared at a Weight Watcher's meeting. You must use parchment paper.
- Preheat oven to 425 degrees.
- Blend spinach and mozzarella in a food processor.
- Add egg and blend.
- Spread on parchment paper and bake for 15 minutes. Edges should brown.
- Add your favorite sauce and toppings and broil until cheese melts.
Spinach is one of my favorite pizza toppings, so I was pretty sure that I would enjoy this. I used this as a base for Greek Pizza With Chicken, Feta and Olives, and I spread a bit of homemade pesto on it before adding the toppings. I'm not sure I would use this to replace the crust with every type of pizza, but I would definitely use it with any veggie or chicken pizza toppings. It's a pretty delicate crust, so my pizza was definitely not a "pick up a slice and go" affair -- this required utensils. I'm not sure how it will hold up if reheated because I haven't tried that yet, but I know that it makes for some fabulous cold leftover pizza. I love homemade pizza, so I'm sure I'll be using this often. Thanks for posting! Made for PAC Spring 2014
