- 1 deep dish pie shell
- 1⁄4 cup pickled sweet red peppers, sliced
- 1 tablespoon olive oil
- 4 cups fresh spinach, stemmed
- 4 eggs
- 1 cup heavy cream
- 4 ounces feta cheese, crumbled

- Preheat oven to 350 degrees.
- Saute peppers in olive oil until slightly softened.
- Add spinach and saute until wilted.
- Mix eggs and heavy cream.
- Place feta cheese in pie shell.
- Add spinach mixture and the egg mixture.
