Spinach Onion Souffle

- 2 packages chopped frozen spinach
- 1⁄2 pint sour cream (regular, light, or IMO)
- 1 envelope onion dip mix
directions
- Preheat oven to 350.
- Boil or microwave spinach until soft.
- Mix ingredients in medium casserole dish.
- Cover, bake 30 minutes.

This was really terrific, as well as quick and easy. I forgot to cover it and it still turned out fine. The only thing I will do differently next time (besides maybe covering it) will be to mix the onion mix and the sour cream in advance to give the onion time to rehydrate. Even without doing that, though, this is definitely a winner in this spinach-lover's book!

I haven't got a clue how to cook, but storing up some great recipes here to try. My personal favorites are quick and easy recipes. If they're nutritious, that's even better.
My personal goal is to marry a famous chef (in my next life!)
If I had a month off with no responsibilities, I would probably be 6' under. OK, if I was still alive, I would probably be learning something creative...music, crafts, sailing maybe. Also would be devoting more time to my community. So much to do...someday.
