Fastest, easiest, best-tasting spinach souffle ever. This is how I got my kids to eat spinach.

Try 1 pint of sour cream to make the onion taste milder. Also top with crushed saltines or cheez-its before baking. Make sure you drain spinach well after defrosting and baking uncovered slightly crisps the topping.

  1. Preheat oven to 350.
  2. Boil or microwave spinach until soft.
  3. Mix ingredients in medium casserole dish.
  4. Cover, bake 30 minutes.
