My kids and I have this for breakfast often. We call it our "green drink" and they get so excited when I make it! It's the only way they'll eat spinach. This is a silky smooth, very healthy, energizing drink! (You've got to be a little adventurous though; some people just can't get past the idea of a smoothie being green!)
Peel and slice mango. Combine with spinach and orange juice in VitaMix blender on high for 1 minute. Enjoy your "green drink!".

NOTES: For a thick smoothie, use 1/4 cup orange juice. To thin, just add a little more to get the consistency you like. Also, you do need to use a ripe mango. A not-quite-ripe firm one will not yield a very smooth smoothie!
An excellent smoothie. I added roughly 1/2 cup almond milk plus a splash of orange juice and 1 cup of ice. I like my smoothies thicker and colder. My husband, who is squeamish about anything that looks green, loved the smoothie (I told him afterwards it had spinach.) Thank you for the recipe!

I had a bunch of ceylon spinach, an orange and a mango so this recipe caught my eye. I just peeled the orange and did not bother squeezing it. The smoothie was a bit thick so I just added a little water and some ice. The mango does need to be ripe to get the sweetness to counteract any bitterness coming from the spinach.
Great recipe especially if you don't want to cook and you also need to get your quota of greens in for the day.
