Oops - you forgot to add the pot liquor (spinach liquid) to recipe: When slowly adding milk to onion mixture, add 1/2 cup pot liquor as well - this will cut down on the richness and add even more flavor! Also, Kraft has apparently stopped making garlic cheese rolls since the normal holiday display isn't up at my local grocery stores. Substitute 4 oz. Regular or Mexican Velveeta and 2 oz. Old English Cheese Spread, add a little garlic powder or juice (to taste) and it's pretty close. Great recipe and a "given" on our Thanksgiving and Christmas buffets! Enjoy everyone! BTW, from La. and wanted to tell your husband "thank you" for helping with the recovery (read your bio). I'm in north La. and helped w/ displaced citizens - the outpouring of volunteer support from around the country helped make the pain of losing everything not quite as biter. Thank you again.

This was very good, but very rich!! I cut the recipe in half, and the 2 of us still didn't put a dent in it. I couldn't find a garlic cheese roll, so I sort of made my own substitute with cream cheese and a bunch of herbs & spices. I also used fat-free half and half instead of the evaporated milk.

This recipe is a must at every family get-to-gether! I, too had the River Roads Cookbook. Also, Tony Chachere...Made many recipes, always awesome! I don't think you can do wrong. I use often 2% velvetta and add chopped jalpenos with juice to your taste. Cuts off a lot of fat! Vanessa Conyers, GA

This is the best spinach side dish I have ever had! I have made this several times now and it is frequently requested in my house. My kids love it and it's quick and easy to make. I heat the leftovers and spread it on some crackers for a delicious snack. Thank you for sharing this wonderful recipe!

Very tasty spinach side dish! I served this alongside Pork Chops Marsala With Asparagus Pork Chops Marsala With Asparagus last night. The partner and I enjoyed immensely, although the whole recipe made enough for leftovers for tonite! I used Boursin low-fat garlic and herb cheese. Like another reviewer, the cheese on top did not want to cooperate by melting. Next time I think I'd just throw it in with the sauce to make it richer and maybe sprinkle parm on top. Next time I also think I would add salt to the spinach as well as the sauce mixture. Thanks for sharing!

I made this recipe for Easter and thought it was very good. I doubled all ingredients exactly as written (using Rondele Garlic and Herb spread instead of cheese roll), and baked in a 9x13 Le Creuset casserole. It was perfectly cooked, although the cheese on top didn't melt particularly well. It didn't fly off the buffet table, but I think that's because not everyone loves spinach like I do. Oh well, more leftovers for me. If I make this again, I'll try to track down the cheese rolls.

I halved this recipe and served as a side dish with pork chops tonight. It was a nice change; even my 12-year old "Madeline" loved it!

We liked this alot and were lucky enough to have found the very last garlic cheese roll in the store! I think I may have overcooked it a bit, we found it a little dry, less cook time next time! Very delicous flavor.
