A flavorful combination of ingredients to dress up a spinach pilaf. Preparation and cooking times don't include time to cook rice.

  1. Combine spinach through horseradish.
  2. Put in a casserole coated with cooking spray.
  3. Combine wheat germ and butter and sprinkle over top.
  4. Bake at 325° for 20 minute.
  5. Mix tomato paste through oregano, warm in a saucepan and serve with spinach.

Oh God this was so good! I have never added in wheat germ to anything but homemade bread! I did increase all ingredients slightly, I use 2 tablespoons garlic and added in dried chili flakes for heat, omitted the brown sugar, I used 1 box of frozen spinach, not sure if that is the equivelent to 2 pounds but it worked out fine, this is a fantastic spinach dish,! Spinach is one of our favorite veggies, so I am happy to fine a new recipe that we really enjoy! thanks for sharing eebrag!...Kitten:)

This pilaf was excellent. My BF and I both loved this, with and without the tomato sauce. The wheat germ imparted a wonderfully nutty flavor to the spinach. It's much more flavorful than plain breadcrumbs as a topping. The cheese and rice gave it a nice texture too. The use of tomato paste in the sauce packed a real punch, overpowering the spinach alone so that's why I tried the spinach alone first. (I had enough leftover sauce for a double recipe.) I substituted some sherry for the wine, used a low fat cheddar cheese and cut down a bit on the butter. Instead of 2 lbs spinach I used 18 ounces (two 9 ounce packages) of fresh washed spinach. Will most definitely be making this in the future. Great recipe and very nutritional. Many thanks!
