Yum! I used a little less than a half lb. of fresh spinach that I wilted slightly while cooking the shallot and garlic. I pulsed it couple times in the FP to chop it. Turned out great! Thanks posting the recipe.

Loved the flavor of this recipe and so easy to prepare. To lower fat AND cholesterol even further I used 3 egg whites instead of the whole egg. I was out of parmesan cheese so I used fat free feta. Feta and spinach are a match made in heaven for me. I didn't see the point of pre-cooking the spinach, after all it will be in the oven for 40 minutes. I ran it under water to defrost, squeezed out the water and added to the sauteed onions and garlic. Two servings of this dish made a wonderful, low calorie and filling lunch. Low fat, healthy AND tasty, what else could you ask for? Thanks for posting this great recipe. I'm looking forward to more revamped WW recipes.

Just wonderful! The only things I changed were to use low fat parmesan and green onions instead of the shallots. I served it with celery and apples and both were great with this! Thanks. I will be making this again!
