  • Thaw and drain spinach. Beat eggs with 1 tbsp water. Sautee onion in olive oil until goldens and let cool a bit.
  • Mix spinach, egg mixture, onion and salt and pepper to taste, place in lightly greased casserole dish. Top with feta cheese. Bake at 350 for about 40 minutes.
  • Serve at room temperature.
