This is better than a boxed rice mix! I made with broccoli because I didn't have spinach and it was great. I used the full can of cream of mushroom soup, but I used the low fat/low salt type so I didn't have the too creamy issue. Because I used the light soup I added some garlic salt and dehydrated minced onions to add a little extra flavor. Thanks for a great dish. Next time I will likely decrease the butter as it did end up a little greasy.
This is good!! I used fresh spinach instead of frozen. I steamed it for a few minutes instead of boiling it.I didn't want to lose any of its flavor or nutritional value. I didn't want any of the mushroom soup, so I added the whole can. It made it a little bit creamier. Almost too creamy. I also sprinkled some of the cheese on top of the mixture. I will make this again but I think next time I will use the 1 cup of soup like the recipe says to. Thanks for sharing your recipe. Made for PAC Fall '07.
i hate cooked spinach so i hated this dish....my dad loves spinach and he said it was ok....i know i won't ever try it again. ill stick to the raw spinach
This was great! I changed it just slightly, cooking the spinach per the package directions rather than boiling it. Also, though it wasn't specified, I melted the butter before mixing it in (and also used about 1 Tbsp less - what I had on hand). I saved a little of the cheese back and sprinkled it on top. Baked for 25 minutes. Came out cheesy & delicious! Thanks for the recipe!
5 stars for a great basic, easy to put together side dish. I changed it a bit, sauteed some onion and garlic first, used fresh spinach instead of frozen, threw that in the pan with the onion and garlic for just a couple of minutes, then mixed up the rest and baked as directed. Oh, and added some french fried onions to the mix, plus sprinkled some on top for last 5 minutes of baking. Hmmm, I guess I changed it quite a bit, sorry - but it turned out great! Everyone asked for seconds, a great way to get spinach into their diets. Will definitely make again and again.
