This is really really good! I made it exactly as written except used craisins instead of raisins. Next time (and there will be a next time for sure) I might double the spinach. Make this...trust me....

  1. In a large frying pan, place the oil and the onions, and cook on medium heat until translucent.
  2. Add garlic, basil, salt and pepper.
  3. Cook 2 minutes.
  4. Add the remaining ingredients and cook 5-10 minutes.
  5. Serve plain or with rice.
