Spinach Breakfast Casserole!

"I tweaked this recipe to give it some pizazz for a Brunch Bridal Shower! It was a huge hit and all the girls wanted a copy! It looks very pretty and it's super yummy!! You don't have to use all of the veggies- but it definately adds to the taste and overall look if you do!"

  1. Family opinion: this was just okay. 8 YO DD picked out the ham and let the rest go. Even DH, who eats just about everything, doused it in hot sauce and said "it's not the best." It was really disappointing b/c it actually took 90 mins to bake - the middle took forever - and we were all starving. Sorry!

  2. This is delicious! However I did have troubles getting the middle to cook. Also I did half swiss cheese and half cheddar, and no tomatoes (I didn't have any). Very easy to throw together. I prepared it the night before and it baked up great (except for the middle of course).

  3. This was excellent! I made it for a ladies brunch and everyone loved it. The only change I made was to leave out the black olives because I don't care for them. Thanks Chelseajoy, for a fabulous recipe!

  4. So delicious! And pretty easy to put together. I prepared it a day early and it cooked up fine the next day.
