Another of mom's old school party recipes. I love this one too. You can make the balls ahead of time and freeze them and then just bake them before you need them. Great YUM factor
- 2 (10 ounce) boxes frozen chopped spinach
- 2 cups herb stuffing mix
- 1 large onion, chopped fine
- 4 eggs, beaten
- 1⁄2 cup melted butter
- 1⁄2 cup parmesan cheese
- 1⁄2 teaspoon garlic
- 1⁄4 teaspoon pepper
- Cook and squeeze all water out of the spinach. Mix everything together and chill. Roll into 1 inch balls on a sheet pan.
- Bake 20 minutes at 350.
This is the original recipe as it uses the herb stuffing. I've been making these for years because they're just so good! Double the recipe to make a big batch: they freeze wonderfully uncooked & all you have to do is pop them in the oven.
These were fantastic. Thank you so very much. Everyone at my dinner party loved them.
My mom and I always have some of these on hand in the freezer. They're great to pop frozen straight into the oven/toaster oven when you need a quick appetizer. Very yummy!!!
