This was sooo easy and so good! DH was home for lunch, so I looked this up at noon and we were eating by 12:45. I didn't have Creole seasoning or fresh tomatoes so I used Emeril's Original Essence and canned diced tomatoes. Our 2 and 4 year old daughters even liked it!
Tasty dish.. and I love the small amount of calories and fat! I only gave it 4 stars because I didn't have any creole seasoning which I think would have added just the right amount of kick.
This is the one of the easiest, tastiest recipes ever. I loved it, didn't have creole seasoning either but it turned out great. Can't wait to make it for my friends!
this was delicious and I didn't even have the creole seasonings! I am on no added salt and so I used a very low sodium chicken broth and garlic powder instead of the creole seasoning and onion powder. It was so fresh tasting! Loved it. Will make it lots.
This is a fantastic recipe -- tasty, very spicy and low calorie/low carb, and FULL of nutrients! Easy to make and goes great with Tai Jasmine rice. I suggest using heirloom tomatoes, as they held up well to the baking and retained their beefyness and taste.
I found this to be a GREAT dish - I used a combination of fresh and already steamed spinach, no chicken broth, no onions , no creole and some diced tomatoes from a can, added some sea salt and ground pepper and dill weed, garlic and it came out wonderful. Today, I'm trying it with some thin chicken filets with the same seasonings and I'm sure that I'll love it as well! Thanks for a great tasting, health and low fat meal!! Update 2/10 - Did it with the thin chicken filets and half spinach and half salad mix - EXCELLENT once again!!!
