I used this filling for tamales and it was yummy but I think I'm going to really love it as an enchilada filling. I saved half will give it a go tomorrow. Thanks for posting the recipe.
Thanks for sharing your recipe with us Julesong! The tamales I made with your filling were so delicious! I had to substitute Feta for the Cotija and Sour cream for the Crema, as I had difficulty finding those ingredients. I was able to fill more than 40 tamales with the quantities you gave.
